The addition of a new brewery is almost always an agreeable happening. Another source for fermented libations helps to diversify the existing beer population, and generally encourages brewers not to “rest on their laurels”. If you haven't already read or heard about Trinity Brewing Company, then prepare to beginning salivating profusely. They've just finished construction, and will open their doors on Friday, August 29th.
The brewery brings two notorious beer legends from Colorado Springs together. Jason Yester, the legandary brewmaster from Bristol Brewing, and Todd Walton, the previous founder and owner of Kinfolk's. The former a master of beer alchemy, producing an incredible selection of brews at his former post. The latter the originator of an eclectic tap house living symbiotically within the confounds of an outdoors outfitter. One a wizard of beer creation, and the other a weathered professional of ambiance and serving. Through this union of talents, they also share a common belief in threading their brewery through an environmental and social consciousness that should differentiate Trinity from other breweries and restaurants.

Much of the old wood helping to finish and accentuate the brewpub is reclamated from dilapidated barns. The urinals use a water-free system. Many of the entrées will include organic food from local farmers. The ethos truly seems like one focused on conservation. Todd and Jason have even decided to go with cloth napkins to help reduce their impact on the environment.
Jason has described Trinity as less of a brewpub, and more a “Belgian Beer Café”. All of the beers served, from the Trinity line-up to New Belgian's somewhat rare La Folle, and the other twenty three beers on tap, will be served in their appropriate, intended glasses. Everything from tall, slender, spiring pilsner glasses to short, squatty, bulbous snifter glasses will hold the shimmering splendor of one in a vast assortment of outstanding beers. Already tasted by many, the Trinity beer has been praised and overwhelmingly complimented. The Trinity regulars will be the Sunna Wit, the Chi Golden Speciale, the Farmhouse Saison, the Soul Horkey, and the Awaken Stout. At least half, including the Soul and the Flo, were brewed to be “session” beers, so that the anxious drinker might enjoy a couple with the greatest of ease. The Flo IPA has a great florally nose with a hoppy, yet smooth taste. The Awaken Stout is brewed with coffee, which shows up as great overtones in the malty, slightly bitter brew.

The fare at Trinity will include Belgian fries served curly-cue style in an inverted wire cone with an assortment of dipping sauces, hot Seitan wings laden with a spicy, vinegary, smoke infused sauce, cheese and beer pairings, bread-bowls holding vegetarian chili or various other soups, and ice cream from the local stalwart Josh and John's. They should have a good selection of food for both carnivores and herbivores alike.
Trinity should be a great addition to the ever-growing community of breweries and brewpubs in the Springs. Their unbelievable selection of beer, unique menu, and environmental convictions fill a welcome niche that should sustain them for a long while.
